Both my kids are gluten intolerant and since I am still breastfeeding, I must be gluten-free for them. They get horrible eczema type sores from it, my daughter especially, so we have to be very careful about what they eat. My daughter is also sensitive to corn and my son is allergic to peanuts, so as you can see it is challenging to make food that everyone can eat. This blog is just to show the good things I did find and maybe it can help some of you who may be dealing with the same.

Abstract birthday cake
I made this for my sisters birthday. I just used a vanilla gluten-free mix and baked it in two 8x8 square pans. The frosting I made from scratch and just added blue food coloring. I sprinkled red, yellow, green, and blue sprinkles on it and for a bit of an abstract look I plopped some black tube frosting on there randomly. It looked cool at first then it kind of reminded me of leeches...yuck! :) But it definitely didn't taste yucky, it was good.
