Chicken Alfredo Lasagna

Using gluten free lasagna noodles, cooked as directed, I layered noodles, sauce, broccoli, then noodles, sauce, chicken, and then noodles, sauce, broccoli and chicken. Topping it off with the last of the noodles, some sauce, and then cheese. I cooked it at 350 degrees for about 45 minutes, covered, then took off lid for 5 minutes to melt the cheese.

It was delish!

Homemade ice cream sandwichs with a crunch!

Homemade ice cream sandwichs...


I melted semi-sweet chocolate chips and peppermint chips together for 30 seconds. stirred til melted then spread on a rice thin cracker. After covering both sides, I placed them all in the freezer for a few mins to harden the chocolate.

I then added a little scoop of vanilla ice cream between two chocolate covered crackers. A little bit messy, but oh so scrumptious!  :)

A yummy way to start the day...

What a delicious way to start out the day...These waffles are convenient and toast nicely. I add chopped bananas, honey, and a sprinkle of cinnamon to mine. Mmm, good.

Fabulous Mulberry Jam!


This is my new favorite jam! It's a mulberry jam from mulberries off our own bushes in our yard! SO yummy! I used this site as the basic recipe http://noelbarnhurst.com/blog/jammin/ but I only did 1/2 cup of sugar instead of 3/4 cup and I just used vanilla extract instead of a vanilla bean. I think next time I make it I will use even less sugar since mulberries are already SO sweet. It was delicious and if you ever get a chance you should definitely make it. Mmm, yummy. :)

Popcorn and Candy Arrangement

I made this awesome popcorn ball and candy arrangement for my dad's birthday present. ```````````````````````````````````````````````````````````````````````````````````````````````````````````````````````

I  used this site http://www.marthastewart.com/339167/popcorn-balls for the recipe for the orange balls and I added circus peanuts to the marshmallows for more flavor and because my dad loves them. :) The white ones I made my own recipe with light corn syrup, sugar, and white cheddar flavor mix that came with the pack of popcorn I bought. It was different but good. It was almost like kettle corn with the sweet and salty taste but it had a little more of a cheesy edge to it. Then I used circus peanuts and 3 musketeers, two of my dad's favorites, as added decoration and yumminess.
At the base I used the green leafy lettuce shoved in over a styrofoam piece in the vase. I was very pleased with the turn out of it and may have a new business on my hands. :)

Strawberry Chocolate Banana Sundae

 For awhile I was on a sundae kick where I was just put together all these different combos and this is one of them. I had a broken gluten free ice cream cone so I broke that up and put it on the bottom of the bowl. Then I sliced a banana long ways and placed that on the cone. I put a few scoops of vanilla ice cream on top of that. I poured some strawberry syrup stuff that I made from heating frozen strawberries and a little sugar on the stove til sugar was dissolved. Then I put a little dollop of whip cream and broke up some chocolate bark that I had. It was a fun new twist on my usual sundaes and it was scrumptious. :)

Chicken Avacado Quesadilla

I saw this add for chicken quesadillas and I was like "yum!" So I made this scrumptious thing up!
I used gluten-free flour tortillas, cooked chicken chunks, chunks of avocado, and a lot of cheese. Mmm...it was good. You should try it. :)

A berry good twist on a gluten free bagel.

Mixed berry syrup over cream cheese on a gluten free bagel! For the mixed berry part I just get a bag from thte dollar store frozen section and it usually has the recipe on the bag. You just put in a saucepan on the stove with a little sugar and heat for a few mins til sugar is dissolved and you got yourself some delicious berry syrup/glaze!



Awesome Swirly Cupcakes

 I made these awesome gluten-free cupcakes for a cake walk at my work party. We didn't really end up using them except for my daughter so we got to bring them home and my kids and I enjoyed eating them for the next few days. My kids really liked them!

So for the cupcake part I used this recipe from this blog: http://www.pastryaffair.com/blog/vanilla-cupcakes.html substituting the gluten-free all purpose flour for part of the cake flour. I just used a little cupcake maker instead of putting them in the oven. Then for the frosting I used this recipe http://www.ninerbakes.com/2013/03/03/easy-peasy-tiny-cute-cupcake-marshmallows/ and for the coloring of the frosting I used this http://www.bigredkitchen.com/2009/05/rainbow-cupcakes/ to help me make it cool. :) Then I just add some sprinkle to make it a little more fun and sparkle a little.

Gluten free and Corn free Funeral potatoes

 These funeral potatoes look a little different and that's because they are. I used Rice Chex cereal for a topping instead of corn flakes because my daughter is sensitive to corn. And I just topped it with cheese and it still turned out really good. I went off this recipe from this blog: http://blogs.kcrw.com/goodfood/2011/02/recipe-mormon-funeral-potatoes/ but I used gluten-free cream of mushroom soup instead of the cream of chicken. And I added the Rice Chexs, like I said before, for a little crunchiness. :) Enjoy!

German pancakes!


I grew up with these. They are one of my all-time favorite breakfast foods and thankfully taste just as good gluten-free! So here's all you do:
Preheat oven to 400 degrees
In a 9x13 pan place 2-1 tsp chucks of butter in pan and place in the oven til melted.
Then either in a bowl or blender place:
1 cup of milk
6 eggs and
1 cup of all-purpose gluten free flour
and I add a little xanthum gum to help.
If in bowl whisk by hand til mixed well, if in the blend for like 30 seconds til well blended. Pour mix into the buttered pan and bake for 20 mins. And viola! You have awesome german pancakes! I love how they have big fluffy peaks when they first come out and then they sink down. Such an awesome breakfast. Hope you enjoy!
Oh and just use syrup or honey or whatever you like to use on regular pancakes.
 

My delicious gluten-free banana bread.

 Mmm...Doesn't it look delicious?! Don't you just want some right now?
  Well you are in luck because I am going to give you the recipe I used right now and you can make yourself some of this scruptious gluten-free goodness!

I just used a basic family banana bread recipe and substituted normal flour for gluten-free and then added a little xanthum gum to hold it together a little more. And I usually add a little applesauce so I don't have to use as much sugar and oil. Makes it a little healthier. :) So here's the recipe:

1 cup mashed bananas (2-3 medium sized ones)
3/4 cup applesauce
1/2 cup sugar
1/4 cup margarine
2 eggs...Mix all together, then add:

2 cups all-purpose gluten free flour
1/2 tsp salt
1 tsp baking soda
1 tsp xanthum gum...mix salt, soda, and gum into the flour a little bit, then mix with all the wet ingredients.
Optional: you can also add 1 tsp of cinnamon for a little more flavor or any nuts or chocolate chips to give it a little extra.

Bake @ 350 degrees for 1 hour or @ 400 degrees for 10 minutes then turn down to 350 degrees for 20-30 minutes. Until you can stick a toothpick or knife in and it comes out clean. Enjoy!

Easter grass cupcakes

I took this to the Easter service at my dad's. I just used a gluten free vanilla cake mix and put them in a mini cupcake maker. Then made basic frosting using plain yogurt instead of milk and adding a little cream of tartar to stiff a little and I add some lime jello mix that I had left over to make green and give a little flavor. The grass part is just coconut mix with a little green food coloring. And then topped off with a jelly bean!

Pumpkin Custard Crisp

 
I had a lof of pumpkin puree to use up and not any gluten-free flour so I checked online and using parts of a couple different recipes- I made my own recipe! I kind of just slapped it together so the measurements aren't exact and may need to be tweaked to your liking.
 
For custard:
2 C pumpkin puree
1 C plain yogurt
2 eggs
1 C sugar
1 tsp cinnamon
 1 tsp vanilla
and half scoop of protein shake powder (optional).
 
For crisp:
1/4 C cold butter
1/2-1 C vanilla granola
1 - 1 1/2 C gluten free oats
1/2 C brown sugar
1 tsp cinnamon
 
Mix custard ingredients. In another bowl for crisp, cut in cold butter into other ingredients until crumbly. Spread crumbly mix over custard mix evenly and bake @ 350 degrees for about an hour or until browned, bubbly, and center doesn't jiggle anymore. Good luck! Hope you enjoy!

Abstract birthday cake

I made this for my sisters birthday. I just used a vanilla gluten-free mix and baked it in two 8x8 square pans. The frosting I made from scratch and just added blue food coloring. I sprinkled red, yellow, green, and blue sprinkles on it and for a bit of an abstract look I plopped some black tube frosting on there randomly. It looked cool at first then it kind of reminded me of leeches...yuck! :) But it definitely didn't taste yucky, it was good.

Heart shaped pancakes

 
         I made these for valentines for my kids. I make the batter froom scratch. I start with a couple eggs, pour in a some milk (like 1-2 cups), some applesauce (like 1/2-1 cup) and I mix that together then add 1 1/2 c of gluten-free all purpose flour, 1 tsp of baking soda, a dash of salt, and a little protein shake powder I have. I mix then if not very thick I add like a 1/2 cup of gluten-free oats. To make hearts I pour mix in one spot and then with a spoon I spread to a heart shape. Pretty simple but great to show someone you love them. :)

REAL Gluten-free pizza crust


 Do you ever get sick of the flat rice crusts that most gluten-free pizzas are made of? I know I do. I wanted some actual REAL breaded crust, so I bought this Gluten Free Pantry french bread & pizza mix and this is what it looks like after it's cooked...

This is my chicken alfredo version and it is DELISH!
 



 

And this is just a regular pizza version with spaghetti sauce, hamburger meat, and cheese.

Both are fabulous! This crust takes a minute to prepare and must rise 40 mins so you have to plan a head abit, but it is definitely worth it.



My pretty peanut-free sundae.

            Just had to share because it looked so pretty.
I sliced a banana in half long-ways and place on bottom of  the bowl. I placed to scoops of vanilla ice cream on the banana, then a dollop of almond butter on each scoop. I poured gluten-free chocolate syrup on that then sprinkled slivered almonds on top. Gorgeous! It was yummy, but I think it would have been yummier with real chocolate syrup, instead of gluten-free.

Yummy food that's good for you too!

Mmm...I'm all about yummy food that's good for you too. This is my lasagna-style noodles on the stove.
 
 
 It is delicious. I just took a bag of gluten-free penne noodles, 1 lb. of hamburger, jar of prego sauce, some torn up baby spinach, some water for the noodles to absorb, I covered and cooked it for 30 -40 mins and then after it is cooked, I uncovered and I topped it of with cheese. You can also add if you like: diced tomatoes, cottage cheese, or other veggies like chopped zucchini or squash.
                                          I ate a lot of it myself. I love food like this!!
